How to Make Matcha Balls

(Makes 12)
Ingredients
75g (2½oz) cashews
40g (1½oz) desiccated coconut
1 tbsp chia seeds
2 tsp matcha powder (plus extra for rolling)
2 tbsp coconut flour
40g vegan protein powder
2 tbsp coconut oil
4 tbsp runny honey
3–4 tbsp water
Method
In a food processor, blitz cashews, coconut, chia seeds, matcha, coconut flour, and protein powder until fine.
Melt the coconut oil gently, then add it to the mixture along with honey and water. Blitz again until it forms a dough. Add more water if too dry.
Divide into 12 portions, rolling each into a ball.
Roll balls in a little matcha.
Chill until firm. Store in an airtight container in the fridge.
